Pumpkin Bars with Cream Cheese Frosting



  • 15 oz Canned pumpkin
  • 1 2/3 cup white sugar
  • 4 Eggs
  • 1 t Vanilla
  • 1 c vegetable oil
  • 2 cups sifted four
  • 2 t baking powder
  • 1 t baking soda
  • ½ t salt
  • 2 t cinnamon
  • ¼ t cloves
  • ¼ t ginger


  • 1 stick Butter, softened
  • 8 oz Cream cheese, softened
  • 1 tsp vanilla
  • 3 cups Powdered sugar




  1. Preheat the oven to 350 degrees.
  2. Using a hand mixer, combine the pumpkin, sugar, eggs, vanilla and oil. Mix on low speed until combined, and then on medium speed until the mixture is light and smooth.
  3. Combine the dry ingredients.
  4. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients. Mix until the batter is lump-free.
  5. Spread the batter into a greased 10X13 baking pan.
  6. Bake for 25-30 minutes or until a toothpick inserted into the middle of the bars comes out clean.
  7. While the bars are baking, combine the butter, cream cheese and vanilla. Mix on medium-high until smooth. On low speed, slowly add the powdered sugar. Mix until the frosting is smooth and airy.
  8. When the bars are cooled, spread the cream cheese frosting on top and enjoy!
