Greek Pasta Salad

 

Ingredients

  • 3 cups dry pasta, cooked according to package directions
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1/2 purple onion, chopped
  • 8 ounces crumbled feta
  • Optional: olives, capers

Dressing Ingredients

  • 2 Tablespoons lemon juice
  • ½ teaspoon lemon zest
  • 2 Tablespoons fresh chopped dill
  • 1 teaspoon garlic powder
  • 2 teaspoons dried oregano
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

 

Combine cooked pasta, chopped cucumber, tomato and onion and crumbled feta in a large bowl. Whisk all dressing ingredients together. Pour dressing over pasta mixture and stir well to combine. Serve immediately or keep in the refrigerator for up to two days.
