Baked Coconut Shrimp (w/ fries)
- Shrimp, peeled and deveined
- 1 cup Panko
- ½ cup unsweetened shredded coconut
- 1 T sugar
- 3 Egg whites
- ½ cup Cornstarch
- Salt
- Dipping Sauce
- ½ c Fresh mango
- 1 T sriracha
- ¼ cup mango marmalade
- 1 T mayo
- ¼ t Salt
- 1 T Honey
Directions
- Mix the panko, coconut and sugar in a bowl
- In a separate bowl, whisk three egg whites until they are white and foamy
- In a third bowl, mix the cornstarch and salt
- Preheat the oven to 350 degrees
- Coat each shrimp with cornstarch, then dip in the egg white mixture and then the coconut mixture. Line the shrimp on a baking sheet. Bake for 12-15 minutes or until the shrimp turn golden in color.
- Meanwhile, combine all dipping sauce ingredients in a food processor or blender. Blend until smooth.
