Baked Coconut Shrimp (w/ fries)

  • Shrimp, peeled and deveined
  • 1 cup Panko 
  • ½ cup unsweetened shredded coconut
  • 1 T sugar
  • 3 Egg whites
  • ½ cup Cornstarch
  • Salt
  • Dipping Sauce
    • ½ c Fresh mango
    • 1 T sriracha
    • ¼ cup mango marmalade
    • 1 T mayo
    • ¼ t Salt 
    • 1 T Honey


  1. Mix the panko, coconut and sugar in a bowl
  2. In a separate bowl, whisk three egg whites until they are white and foamy
  3. In a third bowl, mix the cornstarch and salt
  4. Preheat the oven to 350 degrees
  5. Coat each shrimp with cornstarch, then dip in the egg white mixture and then the coconut mixture. Line the shrimp on a baking sheet. Bake for 12-15 minutes or until the shrimp turn golden in color.
  6. Meanwhile, combine all dipping sauce ingredients in a food processor or blender. Blend until smooth.
  7. Enjoy!
