Apple Cider Donuts

Ingredients

  • 1 ¼ cup apple cider, boiled and reduced to ½ cup
  • 2 c flour
  • 2 t cinnamon
  • 1 t baking powder
  • 1 t baking soda
  • ¼ t salt
  • 1 egg
  • 2 T melted butter
  • ½ c brown sugar
  • ½ cup sugar
  • 2 t vanilla
  • ½ cup buttermilk
  • Cinnamon Sugar
    • ½ cup sugar
    • 1 T cinnamon
  • 2 T melted butter

 

Directions

  1. Bring apple cider to a boil over high heat. Reduce temperature and simmer until there is about ½ cup of liquid remaining. Remove from heat and let cool completely.
  2. Preheat the oven to 350 degrees.
  3. Combine dry ingredients. Set aside.
  4. Whisk egg, butter and sugars.
  5. Add vanilla, reduced cider and buttermilk. Whisk until smooth.
  6. Slowly stir the wet mixture into the dry mixture. Pour the batter into a plastic bag or pastry bag. Snip the end.
  7. Fill the donut pan about 1/3 of the way full with batter. Bake at 350 for 14-15 minutes.
  8. Combine the sugar and cinnamon to make cinnamon sugar.
  9. As soon as the donuts leave the oven, brush the top with butter and roll in the cinnamon sugar. Enjoy!
