Savory Potato Pastries



  • 2 tablespoons butter
  • 2 russet potatoes, boiled
  • 2 oz Goat cheese
  • ½ cup shredded gouda
  • 1 small sweet onion, sautéed
  • 1 tablespoon chopped fresh rosemary
  • 1 tsp salt
  • ¼ cup milk
  • Filo dough
  • 2 tablespoons melted butter



  1. Preheat the oven to 350.
  2. Combine potatoes, butter, cheeses, onion, rosemary and salt in a bowl. Mash with a fork or potato masher. Add in ¼ milk, if necessary.
  3. Lay out filo dough sheets. Trace a circle using a medium-sized bowl. Cut out circles.
  4. Line up your pastry sheet circles 4-5 layers thick. Brush outsides with butter and add 1/3 cup potato mixture. Fold the circle in half and brush the top with butter. Bake for 12 minutes or until the tops are golden. Serve immediately.
