Valentine’s Day Parfait


  • Granola – bake at 180 degrees for 60 min, stirring occasionally
    • 2 c Oats
    • 1 cup chopped nuts
    • 1 tsp cinnamon
    • ½ cup maple syrup
    • ¼ cup brown sugar
    • ¼ cup vegetable oil
    • ½ tsp vanilla
    • ½ cup dried cherries
    • ¼ cup coconut flakes
  • 1 cup Strawberries, chopped
  • 1 cup Raspberries
  • 1 cup Greek yogurt
  • 1 TBSP Honey
  • ¼ cup Frozen Raspberries
  • Whipped cream



Granola: Combine maple syrup, brown sugar, vegetable oil, vanilla and cinnamon in a bowl, stir until smooth. Add in oats, nuts, dried cherries and coconut flakes. Stir until combined. Evenly spread on a cookie sheet. Bake at 180 degrees for 60 minutes. Stir every 20 minutes.


Yogurt: Add yogurt, ¼ cup frozen raspberries (slightly thawed) and honey to a blender or food processor. Blend until smooth.


Assembly: Start with sprinkling the bottom of the glass with granola. Add fresh strawberries and raspberries. Top with yogurt. Repeat 2-3 times, ending with granola. If desired, top with whipped cream. Makes two large parfaits with leftover granola. Enjoy!
